January Recipe – Ginger & Cinnamon Spiced Muffins

I found this recipe for Ginger & Cinnamon Spiced Muffins by Irina Wardas on her Natural Counselor Blog. I love love this blog with all its helpful and holistic advice. When I made these muffins they were a hit, delicious and the aroma filled my kitchen with goodness!

Irina says, “To reduce pain, we need more anti-inflammatory foods to help the body create certain hormones which will help regulate inflammation. We need more foods rich in omega-3, vitamins A, C and E. I would like to share with you this recipe I adopted from old Prevention magazine: the pumpkin, rich in beta-carotene, cinnamon and ginger, well-known anti-inflammatory spices and vitamin C from orange zest might help relieve pain from arthritis and reduce inflammation.”

Ginger and Cinnamon-Spiced Muffins
Ingredients:
1 1/2 whole wheat flour
1/2 cup packed brown sugar
2 tbsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
1/2 canned 100%pure pumpkin
1/2 tbsp canola oil
1/2 tsp freshly grated orange zest
Candied orange peel for garnish
1/2 tsp salt
1 free range egg
1 cup fat-free milk

Directions:
Preheat oven to 3750 F,;Lightly coat 12 cup muffin pan with cooking spray. Stir flour, sugar, baking powder, cinnamon, ginger and salt in a large mixing bowl. Beat egg in a small bowl for 30 seconds, until foamy. Add milk, pumpkin, oil, orange zest. Beat well, and add to flour mixture- stir until moistened.

Fill muffin cups 3/4 full with batter. Bake 15 – 17 minutes until tops spring back when touched with a finger.

This years Chinese Zodiac “Year of the Rabbit” and a fun up cycled find of a Chinese inspired pendant moved me to weave some beads and create a little piece of art. I believe the inscription on the pendant means “Power”, there is nothing like a free form beaded cuff wrapped around you wrist with beautiful jade, coral, turquoise beads and a Chinese inscription projecting power.

According to Chinese tradition, the Rabbit brings a year in which you can catch your breath and calm your nerves. It is a time for negotiation. Don’t try to force issues, because if you do you will ultimately fail. To gain the greatest benefits from this time, focus on home, family, security, diplomacy, and your relationships with women and children. Make it a goal to create a safe, peaceful lifestyle, so you will be able to calmly deal with any problem that may arise. Happy 2011!

I am on a blue and gold kick this week, I just can’t get past it and now I know why… imagine your sitting on a beach, almost sunset, now just marvel at the sky, the water, the colors, smell the fresh sea air, feel the warm breeze on your face and in you hair! There now I feel much better.

December Recipes

Shrimp Dip

1 can cream potato soup
1 can shrimp drained
1 8oz cream cheese
½ tsp salt & pepper
2 tsp finely chopped onion
½ cup slivered almonds
8 oz grated cheddar cheese

Blend together first (5) ingredients

Spread ½ of shrimp mixture in buttered glass cake dish, sprinkle with almonds and ½ cheese, add remaining shrimp mixture on top and remaining cheese

Bake 350 for 25-30 minutes, serve with crackers
